…. And it’s a rainy day… make pickled asparagus! 🤗
Just because it’s raining.. again.. doesn’t mean the veggies aren’t constantly growing. It’s a good thing I love picking in the rains, so it was a perfect day to spend in the kitchen.
Spring Onions

It wouldn’t be a typical Spring here without going foraging for a delicacy called ramps. Also known as wild onions, wild garlic or spring onions.. call them what you like.. but do try these.
Ramps are easy to distinguish from other wild onions by their long, broad, smooth leaves, which a a striking bright green in color.. sometimes with tints of purple. The stalks are similar to those of scallions, though often are wider at the root for a slightly more bulbous appearance. Both the stalks and leaves are edible and absolutely scrumptious, with a mild garlic and onion flavor.
We went picking with a plan in mind. I make a lot of sausages here, and love trying different fillings in them. The field was plentiful, so picking was easy and I didn’t need many for just a few pounds of sausage I’d be making. I ended up making 6 pounds each of chicken with herbs, garlic and cheese filling. The pork and ramps sausage went into the freezer for future use.
We grilled up the chicken sausage for dinner tonight. Earlier this morning, I harvested the first asparagus from the asparagus bed.. another fave of mine, that went into a lemon asparagus risotto…with a large greens salad too. Everything was so good!

A little wine, some butter, garlic, fresh herbs… with some just caught brook trout and just picked asparagus. So darn good!
… and then dessert…. off to Big Daddy’s for an ice cream cone. 😊

Took the day off today and went fishing. The biting was grand… and dinner will be even more so. 🙂 Add some just picked asparagus and greens… a perfect ending for a great day off. Yum!
